🫑 Nonna Pia’s Traditional Stuffed Peppers

When Nonna Pia makes stuffed peppers, you know you’re in for a treat! Simple ingredients, packed with flavor, and prepared the old-school Italian way. ❤️🇮🇹

Ingredients:

  • 4 large bell peppers
  • 1 lb (450 g) ground beef
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 egg
  • ½ cup grated Parmesan cheese
  • ½ cup Italian breadcrumbs
  • 2 cups tomato sauce, divided
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese, optional

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the peppers and remove the seeds and white membranes. Place them upright in a baking dish.
  3. Heat the olive oil in a skillet. Add the onion and cook until softened. Add the garlic and cook for another minute. Let the mixture cool slightly.
  4. In a large bowl, combine the ground beef, cooked rice, onion and garlic, egg, Parmesan, breadcrumbs, ½ cup of tomato sauce, oregano, parsley, salt, and black pepper.
  5. Mix gently until everything is combined. Avoid overmixing so the filling stays tender.
  6. Spoon the meat mixture generously into each pepper.
  7. Pour the remaining tomato sauce around the peppers and add a small spoonful over each one. Cover the dish tightly with aluminum foil.
  8. Bake for 45 minutes. Remove the foil, sprinkle mozzarella on top if desired, and bake uncovered for another 15–20 minutes, or until the peppers are tender and the filling reaches 160°F (71°C).
  9. Let the stuffed peppers rest for 5–10 minutes before serving. Spoon extra tomato sauce over the top and finish with Parmesan and fresh parsley.
